Rajgira kheer for Navratri fast: a quick sweet dish made with few ingredients

Rajgira kheer is a nutritious, easily digested sweet that can be made in little time with a handful of ingredients during the Navratri fast.

Shardiya Navratri began on October 11. For nine days the mood is one of joy and enthusiasm, and both women and men keep the fast during this period.

Different foods are eaten on fasting days. One should also drink plenty of water along with the meals.

During the fast, wafers and fried snacks are often what people eat. Instead of repeatedly eating oily items, a nutritious rajgira kheer is a better choice. Rajgira (amaranth) has calcium, iron and fibre in good measure, along with several other nutrients. On a fasting day, one should eat things that are easily digested.

The kheer needs very few ingredients and is ready in a short time. Here is the recipe for the nutritious rajgira kheer.

Ingredients: rajgira, sugar, dry fruits, cardamom powder, cashew nuts, almonds, milk, saffron, makhana (fox nuts) and ghee.

First, take the rajgira in a bowl, add water and soak it for 3 hours. This will soften it.

Then dry-roast the makhana in a pan on low heat until crisp. This improves the taste.

Next, add water and ghee to the pan and bring the water to a boil. Once it boils, add the soaked rajgira and the makhana.

Cover the pan and cook on low heat for 4 to 5 minutes. When the rajgira and makhana turn soft, add the thickened milk and keep stirring continuously with a spoon.

Then add the sugar, cardamom powder, the dry fruits roasted in ghee and strands of saffron, and mix well.

When the kheer thickens, switch off the gas and serve. The rajgira kheer made this simple way is ready. If you crave something sweet on a fasting day, this kheer is a good option.
