Breakfast is considered important for health, which is why skipping it is discouraged. Poha, idli-sambar and paratha are the usual choices in most homes. But have you tried making upma with rajgira (amaranth)? If you are tired of eating the same things every day, it makes a change.
The recipe takes little time, so it can be made easily even in the morning rush. It offers taste and nutrition together, and adds something new to the breakfast menu. Here is what you will need.
For the ingredients, you need one and a half tablespoons of oil, one teaspoon of mustard seeds and one teaspoon of cumin seeds. Along with these, take 18 to 20 curry leaves, half a teaspoon of asafoetida and two chopped green chillies. Also take an inch of ginger and one chopped onion. Among the vegetables, half a green capsicum and half a tomato are needed.
For the spices, you need three-quarters of a teaspoon of turmeric, half a teaspoon of red chilli powder and half a teaspoon of garam masala. The main ingredient, rajgira, is needed at three-quarters of a cup, soaked and cooked. Keep ready two tablespoons of fried peanuts, salt to taste, some coriander leaves and the juice of half a lemon.
To make it, first put a pan on the gas and add the oil. When the oil is hot, add the cumin and mustard seeds and let them crackle well. Then add the curry leaves and asafoetida.
Once the tempering is cooked, add the chopped green chillies, ginger and finely chopped onion, and cook everything on medium heat. When the onion starts turning pink, it is cooked. Then add the finely chopped capsicum and tomato.
When these are well cooked, it is time for the spices. Add the turmeric, red chilli powder and garam masala and mix everything together. Then add the soaked rajgira and salt to taste, and cook the upma well.
Finally, add the chopped coriander leaves and fried peanuts and stir the upma properly. Your hot, tasty rajgira upma is ready.
