To make thalipeeth, you need wheat flour, onion, green chilli, jowar flour, gram flour, salt, turmeric, red chilli powder, oil and vegetables of your choice.
The method is very simple. First, mix wheat flour, jowar flour, gram flour and salt to taste in a large plate. Then add finely chopped onion, coriander, green chilli and vegetables of your choice, and mix well by hand.
While preparing the thalipeeth mixture, add water if needed, or knead the dough using the water released by the onion and vegetables. Cover the prepared dough and set it aside for a while. Then dampen a cotton cloth.
Heat a griddle. Take a portion of the dough and pat it into a thalipeeth using your hand or the damp cloth, then place it on the griddle and cook on both sides until crisp. While cooking, drizzle oil around the edges, as this makes the thalipeeth crisp and adds to the flavour.
