Eating habits keep changing in a fast-paced life. According to the recipe, after changes in children's diets they become quite thin, and parents often complain about their health.
Growing children need essential nutrition. When children turn thin, they are often given supplements to drink. The recipe says nutritious food should be given to them instead.
According to the recipe, rajgira (amaranth) protein barfi can be fed to children for proper growth and strong bones. It is said to contain carbohydrates, healthy fats and plenty of protein. It is suggested as a morning snack or when children feel hungry. The recipe calls packaged protein powders and artificial supplements sold in the market harmful for children's bodies, and therefore recommends home-made nutritious food.
Now, the ingredients. The barfi needs almonds, cashew nuts, walnuts, sunflower seeds, makhana (fox nuts), rajgira flour and grated dry coconut. Pure ghee, milk, date syrup, nutmeg powder, chopped pistachios and cardamom powder are also needed.
First, heat a pan and roast the cashews, almonds, walnuts and sunflower seeds until light brown. When they turn crisp, set them aside to cool, then grind them finely in a mixer.
In the same pan, roast the makhana until crisp and make a powder of it. Then heat ghee in the pan, add the rajgira flour and keep stirring it with a spoon on low heat.
When the raw smell of the flour reduces, add the grated dry coconut and keep roasting the mixture on low heat.
To the prepared flour, add the ground nuts, makhana powder, date syrup and a little milk, and mix well. Finally, add grated nutmeg and cardamom powder to the mixture.
Grease a plate with ghee, pour in the mixture and spread it evenly. Sprinkle finely chopped pistachios on top and press lightly. Then cut it into pieces as desired. The rajgira protein barfi is ready.
