With immunity dipping in winter and children shunning vegetables, broccoli soup is a quick way to get them to eat well.
The weather keeps changing, and the changes affect the body directly, so looking after health is important. In winter, the body's immunity falls and small children grow weak. To make up for this weakness, children are given all kinds of foods. But they often shy away from vegetables, pulses and grains.
In such a situation, you can make a quick broccoli soup for them. Broccoli contains vitamin C, sulforaphane, fibre and several other nutrients. It is said to have many benefits, so it should be included in meals twice a week. It is also described as very beneficial for patients with Type-2 diabetes. Here is the recipe for broccoli soup.
The ingredients for the soup are broccoli, garlic, ghee, onion, cumin, black pepper powder, salt and carrot. Other vegetables of your choice can be added as well.
Begin by washing the broccoli well in water and cutting it into medium-sized pieces. Then heat ghee in a pressure cooker vessel, add asafoetida and finely chopped garlic, and fry until the garlic turns light red.
Next, add the onion, carrot and broccoli and mix well. Once the strong smell of the broccoli has gone, add water, close the cooker lid and let it go through 5 whistles.
Let the cooked vegetables cool, then put them in a mixer jar and grind to a fine paste. Now heat half a spoon of ghee in a pan and add cumin, mustard and the prepared paste. Add the vegetable stock as well and mix the whole mixture well.
After the soup comes to a boil once, add black pepper powder and salt to taste and mix. The tasty broccoli soup for children is ready.
