Children are especially fond of dishes made with cheese. If your tiffin box keeps coming back half-eaten, try packing a cheese paratha this time. It gives the traditional paratha a tasty, modern twist. Light and crisp on the outside, soft with melted cheese on the inside, this paratha is a great option for breakfast, a kids tiffin box, or a light evening snack. Rolling out wheat flour dough and stuffing it generously with cheese, spices and vegetables makes the paratha taste even better.
This paratha does not take long to make and comes together easily with ingredients available at home. Adding a little green chilli, coriander, onion or oregano along with the cheese gives the paratha a nice aroma and flavour. Ingredients needed: 2 cups wheat flour, 1 cup grated cheese, 1 small onion finely chopped, 1-2 green chillies finely chopped, 2 teaspoons finely chopped coriander, half a teaspoon red chilli powder, half a teaspoon oregano or mixed herbs, a quarter teaspoon cumin powder, salt to taste, 1 teaspoon oil, water as needed, and ghee or oil for roasting the paratha.
To prepare it, first take wheat flour in a large bowl and add a little salt and a teaspoon of oil. Add water and knead into a soft dough, then cover and leave it aside for 10 to 15 minutes. Meanwhile, in a separate bowl take grated cheese, finely chopped onion, green chilli and coriander. Add red chilli powder, cumin powder, oregano or mixed herbs and a little salt, and mix everything well. Since cheese is already salty, use less salt.
Next, divide the kneaded dough into equal portions. Take one portion, dust it with flour and roll it into a small round. Place the cheese filling in the centre of the round and bring the edges together to seal the filling completely. Press gently and roll it out again into a round or square shaped paratha. Heat a griddle and place the paratha on it. Once light spots appear on one side, flip the paratha, and apply ghee or oil on both sides, roasting until golden and crisp. Prepare the rest of the parathas the same way. Serve the hot cheese paratha with green chutney or tomato sauce.
