Deciding what to cook for lunch every day is a question every household faces. If you are looking for something that cooks quickly and tastes delicious, Amritsari paneer bhurji is a great option. This dish comes together fast with few ingredients and pairs wonderfully with hot chapatis.

To make it, you will need paneer, tomato, onion, red chilli powder, turmeric, gram flour (besan), kasuri methi, chaat masala, pav bhaji masala, black pepper powder, cumin powder, fresh coriander, oil, green chillies, butter and curd.

First, whisk curd in a bowl until smooth, making sure there are no lumps. Then roast the kasuri methi and gram flour separately in a pan, which enhances the dish's aroma. Heat oil again in the same pan.

To the hot oil, add turmeric, red chilli powder, the roasted gram flour, kasuri methi, black pepper powder, cumin powder, chaat masala, pav bhaji masala and the whisked curd, and mix well. A little water can be added to this mixture if needed.

Separately, heat oil and butter together in a pan. Add green chillies, cumin seeds and crushed garlic, and roast until lightly golden. Then add finely chopped onion, tomato and salt to taste, and cook.

Once the onion mixture is cooked, add the gravy prepared earlier and cook on low heat until the oil separates. Add a little water to help the gravy cook well on low flame.

Next, add crumbled paneer and mix well, keeping the flame low. Once the bhurji is fully cooked, garnish with finely chopped coriander and serve.
