How to make syrup-free rava laddus before Diwali that stay soft and hold their shape

Only a few days remain until Diwali. Homes are being cleaned ahead of the festival, and a variety of faral, the festive snacks, are being prepared alongside. From chakli and karanji to besan and rava laddus, many items are made on the occasion.

Of these, many people find rava laddus the hardest to make. Something often goes wrong while making them and the taste suffers. Sometimes the laddus turn harder than they should be, and at other times they become so soft that they do not bind properly.

Here is an easy recipe for rava laddus without sugar syrup. It is said that laddus made this way will not be hard at all and will taste good. Everyone at home will praise them after eating. The laddus are ready quickly and in a short time.

First, the ingredients. You will need rava, ghee, powdered sugar, cardamom powder, chopped pistachios and raisins.

To make them, first put ghee to heat in a kadhai. Once the ghee is hot, turn the gas low, add the rava and roast it on a low flame.

The rava has to be stirred continuously with a spoon for about 20 to 25 minutes. This keeps it from sticking to the kadhai and lets it roast to a reddish-brown colour. When the colour of the rava slowly begins to change and turns reddish-brown, switch off the gas. Then add one more katori of ghee and mix well.

When the rava has cooled to lukewarm, add powdered sugar and cardamom powder to taste. Mix the whole mixture well and leave it aside for an hour so that everything blends properly.

After an hour, put the mixture into a mixer jar and grind it. This helps the laddus bind softly. Then add the pistachios and raisins and shape the laddus to the size you like.

Your fragrant syrup-free rava laddus are ready. Laddus made by this easy method will not be hard at all.
