How to make spicy Indian-style masala Maggi at home
A simple recipe to turn plain Maggi noodles into a spicy Indian-style dish using onion, tomato and everyday spices
Maggi is a favourite for almost everyone, but if you are tired of the plain version, try mixing in Indian spices for a whole new taste. Using onion, tomato, green chilli, capsicum and spices already in your kitchen, you can easily make a spicy Indian-style Maggi at home. Whether it is breakfast, a light evening snack or unexpected guests, this recipe comes together quickly. The vegetables and spices added give the Maggi a nice aroma, colour and spicy flavour.
Ingredients needed: two packets of Maggi noodles, one medium finely chopped onion, one medium finely chopped tomato, one finely chopped green chilli, a quarter cup finely chopped capsicum, a quarter cup finely chopped carrot, a quarter cup peas, one to two teaspoons oil, a quarter teaspoon turmeric, half a teaspoon red chilli powder, half a teaspoon garam masala, a quarter teaspoon cumin seeds, a quarter teaspoon coriander powder, Maggi masala to taste, salt as needed, two to two-and-a-half cups water, and coriander leaves for garnish.
Method: First heat oil in a pan and add cumin seeds. Once the cumin seeds crackle, add the finely chopped onion and green chilli, and saute until the onion turns slightly soft and translucent. Then add the chopped tomato, capsicum, carrot and peas, mix well and saute for two to three minutes so the rawness of the vegetables goes away.
After that, add turmeric, red chilli powder, coriander powder and garam masala. Add salt to taste and saute for a minute so the spices coat the vegetables well. Then add about two to two-and-a-half cups of water to the pan, stir the mixture and let the water come to a good boil. If you want the Maggi to be less watery, keep the water slightly less.
Once the water starts boiling, add the Maggi noodles along with the accompanying masala. Gently stir the noodles so they mix well with the spices and vegetables. Then let the Maggi cook on medium heat for about two to three minutes, stirring once or twice in between. If the gas is turned off just before the noodles become fully soft, the Maggi retains a better texture. After turning off the gas, add finely chopped coriander leaves on top and serve the hot spicy Indian-style masala Maggi immediately.
